Gallettes (Grammy Lucienne Lacasse recipe)
1 Heaping T. sugar 1 1/2 t. salt 1 heaping T shortening 1 1/2 Cups water Hot and Cold Put all in bowl and mix til lard partly melts. When lukewarm add yeast cake. One or half of a large cake and let stand a few minutes to disolve. Add about 4 cups of flour and mix until dough is stiff and leaves sides of bowl let rise until double. Then knead well, roll and cut in pieces for frying. Let rest while fat is heating. Deep fat fry at 370degrees, Drain in paper towels. Serve hot with butter and maple syrup.

3 Cups BrownSugar (Grammy uses 2 brown, 1 white) 1 Cup milk or evaporated milk 1/2 tsp. Salt 3 Tbl. Butter or Margerine 1 1/2 tsp. Vanilla 3/4 Cup nuts if desired Combine sugar, milk and salt in a pan over low heat. Stir until boiling. Stir frequently to prevent curdling until it reaches 236degr. or the softball stage. remove from heat and drop in butter (grammy adds marshmallow fluff, a few tablespoons) cool to lukewarm. add vanilla. beat until creamy and loses it's gloss, add nuts. put into greased pan.
Nancy's Quick Party Bars
Ceram together: 1 Stick margerine 1/2 Cup brown sugar Add and beat until creamy: 1 egg 1 tsp vanilla Add and Mix: 1/2 cup flour 1/2 cup oatmeal Put in buttered 8x8 pan and bake at 350 degrees for 20 minutes. Place on rack to cool. Melt 1 cup chocolate chips and spread over the top. Sprinkle with chopped nuts if desirecd. Cool and cut into bars. |
